Special Report - Soy and Nutrition

2004


With this Special Report, ILSI Argentina introduces a series intended to provide updated scientific information in Spanish, on issues closely affecting health and quality of life. In this regard, ILSI International is undertaking projects in different areas of knowledge, among which it has identified some areas of global interest, such as food safety, obesity and biotechnology.

Given the relevance of the soybean crop in our country, as well as the interest and concern derived from its inclusion in children and adult’s diets, we have devoted this first issue of the series to this legume.

In line with our mission, professionals from academia, industry and public organizations specialized in the various aspects of this crop, have participated in this report. The subjects dealt with, range from agronomic aspects, nutritional properties and food applications, up to its safe consumption. This publication includes the contributions of international experts who have presented their works in two seminars held in Argentina during 2003, organized by the Argentine Society of Nutrition and the Argentine Association of Dietitians, and by the Ministry of Health of the Province of Buenos Aires and ILSI Argentina, respectively.

We believe this publication will provide scientific background and updated experimental evidence contributing to provide a comprehensive overview of the food uses, nutritional properties and safety of soybean and its by-products for consumption.
